Ingredients

  • 2 Tbsp poppy seeds
  • 2/3 C unsweetened applesauce
  • 2 Tbsp honey
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 6 eggs
  • 2/3 C unsweetened almond milk
  • 2 tsp lemon zest
  • 1/3 C lemon juice
  • 1 C tapioca flour
  • 1 C coconut flour
  • ¼ tsp sea salt
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350°
  2. Mix dry ingredients in a bowl until well combined
  3. In a separate bowl mix wet ingredients and fold into the dry
  4. Pour the batter into greased and lined muffin tins and bake for 25 minutes
  5. Let cool and serve! They taste great with grass fed butter on them!
