Ingredients

  • 2 C almond flour
  • ½ C arrowroot flour
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • ½ C butter
  • ½ tsp sea salt
  • ½ C coconut sugar
  • 1 egg, whisked
  • 1/3 C chocolate chips

Directions

  1. Preheat oven to 350°
  2. Place the dry ingredients in a bowl and mix until well combined
  3. Melt the butter and add to a separate bowl with egg and vanilla extract and gently mix together with a fork
  4. Pour the liquid mixture into the dry ingredients and fold with a spatula until well combined and batter forms
  5. Fold in the chocolate chips
  6. Line a large baking sheet with parchment paper and evenly scoop the batter into small dollops
  7. Gently spread them with a fork to ensure you get a thinner cookie, they will spread more as they cook
  8. Bake for 22 minutes, let cool on a cooling rack and enjoy!
